You had me at goat cheese. LOL The combo of thyme and mushrooms is amazing. Thank you for the idea. I am making these for a gathering tomorrow but subbing goat cheese for cream cheese, sauteing minced shallot and fresh thyme ( a kissing complement for mushrooms) and Italian parsley to stuff them with. Place reserved, chopped mushroom stems in the pan, and slowly cook and stir until soft. Stir in the flour to coat mushroom stems. Mix in green onions, sherry, minced clams and 1/2 their reserved juice (discard remainder), garlic, bread crumbs, pepper, Italian-style seasoning and bacon bits.

- 1packagecream cheese
- 1/2cupParmesan cheese
- 1/2largeonionchopped finely
- 2clovesgarlicchopped finely
- 1tspchiveschopped finely
- 1/4largered pepperchopped finely
- 1tbspbutter
Clams Casino Stuffed Mushrooms
Wipe mushrooms with a damp paper towel to clean. Remove stems, set aside caps and chop stems to add to filling. In a medium bowl, mix crabmeat, chopped mushroom stems, onion, dry mustard, 1 cup parmesan cheese, SOFT bread crumbs (fresh bread frozen and then shredded), parsley, red and black pepper, and garlic salt. These paleo-friendly stuffed mushrooms use a mixture of ground turkey, garlic, herbs, and some finely chopped water chestnuts as a filling. With no breadcrumbs, wheat, or flours, these mushrooms are also gluten-free. Mix the turkey with herbs and seasonings and generously fill each cap. Bake for 35 minutes or until turkey is cooked.
